Yummy scrummy banana cake

This is somewhat of a healthy banana bread. I like to keep in for breakfast on the go and slice and freeze some or make it into muffins. I really love to swap the sugar for dates if giving it to the little ones. Sometimes gluten free baking can be a bit dry but this is perfect!

3 large bananas
2 cups of gluten free self raising flour
big pinch of salt
150 grams of sugar (replace with a cup of finely chopped dates if prefered)
1 cup of walnuts chopped
2 tbl sp of pepitas (good source of iron)
1/2 a cup of yoghurt
2 eggs
70ml of olive oil

Mash banana add ingredients and mix well. Bake for 30-45 minutes depending on container.
Cooking time will change depending on depth of container but makes quite a decent size.

Gluten Free Baby

It has come to my attention that diet can effect the sleep of a breast fed baby. So much to my disappointment, I am giving up gluten. It has been a difficult decision and even harder to put into practice but it seems to help. So here is my first recipe to help you out. Most of the recipes will be suitable for the baby and the family, maybe with a little extra tweak for you. I am not a big believer in dairy for breastfed babies so you will find quite a few of the family recipes vegan. Hope you find them yummy!
